I had a thought that I wanted to brew a caramel apple Ale for the Fall and thought this mild brown ale recipe would make a great base for it.
The All Grain kit comes with 7lbs of British Pale Grain, 8oz of Crystal 60*L Malt and 4oz of Chocolate Malt. I bought an additional 2lbs of Caramel 120*L Malt for some additional caramel flavor that I will replace some of the British Pale Grain with. I’m also thinking of putting some caramel candies in the boil to give it that more caramel candied apple flavor. I’m not sure how to get any apple flavors in the mash but I’m thinking I want to put some green apples in the boil. I really don’t want to add any flavoring to the wort afterwards, as I’m afraid it will just taste like a flavored beer.
Additionally it comes with 1oz of Northern Brewer Hops and 1oz of Willamette Hops and 12g of CellarScience English Dry Yeast. I bought another 12g of this yeast as I think this wort will have a lot of sugar content.

I’ll report back on this recipe and how it turned out in but in the meantime, if anyone has any recommendations on getting the caramel and apple flavors infused into the beer, please reach out and let me know. I’d be interested in hearing your thoughts and ideas. I’m going to do a little more research on the above mentioned before I start.
9-12-23. I haven’t started to brew this one yet as it’s still going to be a couple of weeks, but I’ve decided not to incorporate any of the apple. I’m afraid it won’t turn out the way I want and become something awful. I am going to stick to the caramel part though through the caramel grains I bought and hopefully that’ll add another layer to the brown ale. I will report back.
11-6-23. Well, I finally got around to brewing this one this past Saturday (11/4/23) and it went pretty well. I added the additional 2lbs of caramel malt 120L but didn’t put any caramel candies in the boil, I just decided to stay away from that altogether and hope that enough caramel will come through with the 120L caramel malt. I loved the color and aromas I got from it, which included some chocolate malt that I’m really excited about. I didn’t use the wort chiller on this – I just let it cool overnight and pitched the yeast on Sunday morning. I didn’t check the airlock this morning but I will tonight to see if we have liftoff.
12-10-23. I bottled this one today and have high hopes for it. It seemed to be pretty good before carbonation and it should be ready this coming Christmas. I’ll try it on Saturday and see how it is. I need to determine a name for it any maybe ultimately create a label if it’s worth sharing.
